A potato season, from leaf to tuber
These are general notes on how potato crops develop. They aren't this farm's schedule, and the photographs are illustrative.
Stage 1 of 3
Flowers above the row
Potato plants often flower partway through the season. Around that time, tubers are usually starting to form and fill out underground, in the ridged soil along each row.
Stage 2 of 3
Lifted from the soil
At harvest, potatoes are lifted out of the ridges and gathered for sorting. Growers time this by variety and by what the crop is for, whether early potatoes or ones meant for storage.
Stage 3 of 3
Skins that hold up
Potatoes meant for storage are often left in the ground for a while after the tops die back, so their skins can toughen. Firmer skins bruise less when the crop is handled.
